THE DOMAIN, A FAMILY BUSINESS

Fourth generation from a family of vine-growers, Bernard Defaix started with 2 ha in 1959. From this period, a method to protect the vineyard against spring frost was discovered. Thanks to this, the vine-growers could be sure to have a minimum of harvest every year and so they began to develop stable trade markets. 

The Vineyard

The domain stretches over 27 hectares : Chablis Premier Cru (Côte de Lechet, Vaillons and Lys), Chablis and Petit Chablis.

In order to make good wine, you need good grape.That's why the first step in a successful vinification is the vineyard. The training of the vines on organic farming with a very rigorous follow-up enables the grapes to reach their peak level of maturity and expression.

Protection against frost

The first protective methods were introduced in the 60's,which enabled the Chablisian

vineyards to develop. Indeed, before this time, it was not uncommon for an entire harvest to be destroyed every 2 to 3 years.
