He was never afraid or threaten to share his knowledge a mentor a friend"

Lets find out more about Miroslav....

Why wine... How It All Started..!

"I had my first sip of red wine mixed with a splash of cold water when I was 12 years old somewhere on Dalmatian coast. My family still remind me of this event mentioning that perhaps that was beginning of my indisputable and never-ending love towards wine in general. "

Have you visited any wine growing countries?

"The first wine region I visited was Champagne; this route took me to the most beautiful places all over the world: France, Italy, Hungary, Slovenia, Croatia, Serbia, Austria, Bulgaria, Russia, Cyprus, Argentina, Chile,Santorini,Greece,Bosnia,Montenegro,Germany, Australia, New Zealand and England (Whisky Distilleries and Beer Brewery)."

Which wine have tasted lately and you was impressed with it ?

In the last couple of months,I would like to single out two wines that i have tasted and both created un memorable impression. The First one is an demi-sec sparkling Wine made by traditional method from the Italy ,Trento D.O.C. Ferrari is the Wine that challenges many Champagnes with complexity ,purity and freshness, this sparkling semi sweet Wine is ideal as an aperitif and as a dessert Wine with all its spectrum Of citrus fruits, golden apple, white flower and its complexity delivered after two years of ageing in the bottle. At the Bistrot 55 we successfully paired this Italian beauty with the Foie gras dish a unique creation Of our Chef and his great Team.

The second Wine is coming from an beautiful Island of Santorini. This dry white wine made me to fall in love with Assyrtiko grape variety and make me understand why my AEL friend and Colleague make the tattoo on his arm of this noble grape variety. Yellow in color with some hints of gold The Skitali 2017 vintage made by Hatzidakis Winery is an Wine with lots of strength and personality. Lemony notes combined with orange blossom , refreshing acidity and lots of mineral notes, then The finish Which seems endless . This Wine is an art and art belongs to The artists , and it remains for us to enjoy their creations for as long as we can.

What are your thoughts about Cyprus, wines and winery's ?

Since 1992 when i came to Cyprus until present time I feel that i have had The great honor Of being a witness to the quality development of the Cyprus wines. The Young winemakers educated at some of the best universities in the world ,follow the steps of they fathers thus contributed to the great quality of the Cyprus wine . Those young Lady's and gentleman's use they innovative approach, creativity ,passion, therefore the superb wines made of indigenous grape variety become more than ever popular here in Cyprus and also abroad reserving the shelf's in many wine shops and some of the best restaurants worldwide . Me as a Sommelier I would not hesitate to recommend wines from Cyprus to the guest and yes, definitely with great certainty and pride.

Many thanks to Miroslav for sharing his thoughts with us.. MCWine team.
