TIP = ( ΠΟΠ) (PDO) (PGI) protected designation of origin.With those indication on Label indicates the protection of uniqueness(quality) of certain wines (vineyards)
Single Vineyard = Gives the opportunity to the winemaker to highlight a specific area
(old vineyards) for the uniqueness terroir , given to those wines a distinctive characters.
Barrel Fermented = Can imbue, complexity, rich, creamy flavors, delicate and integrated oak characteristics in to wines.
Barrel Aged = Can last few months to many years, in result to mature giving huge impact on the taste, stronger structure,silkier texture (Tannin) ,including vibrant aromas of vanilla and smoke.
Oak Mature = Can last few months to many years. Oak can give textural or a flavor element in wine making, depending on whether the barrels are new or used, from French or American oak, and their size.
Ungrafted wines = Cyprus vines were immune to the attack of Phylloxera that attacked vine roots and eventually killed the vine in the late 1800s.It is believed ungrafted wines are Intense, rich, full flavored .
Vintage = Micro-Climate effect the taste and quality of wine.Hot vintages can result in higher alcohol and very ripe grapes to lower acidity.Now days modern wine making and vine-growing techniques and technology make wine quality more consistent year by year.
Sulfites = Sulfites are food preservative widely used in wine making, thanks to their ability to maintain the flavor and freshness of wine.Wine sulfites are antioxidants naturally occurring at low levels in wines.Are found in dried fruits, molasses, sauerkraut and pickled foods, pre-made gravies and sauces, canned vegetables, condiments, frozen shrimp, dehydrated potatoes, potato chips, jams,beers and vegetable juices.
